Pancake Recipe: Scallion Pancakes

The Pancake Handbook: Specialties from Bette's Oceanview DinerThis recipe can be enjoyed as a savory breakfast treat or enjoy as a brunch dish. This can also be served as a side dish to complement the evening meal.


Ingredients:
1 cup flour
1/3 cup water, boiling hot
2 Tbsp.  scallions greens, minced
2 tsp. shortening
½ tsp. salt
4 Tbsp. oil


Directions:
1.Mix flour and water. Add more flour or cold water to dough to make kneading consistency.  Knead until smooth.  Let rest for fifteen minutes. Roll into cylinder and divide into six pieces. Flatten each into a four inch circle. 


Uniworld UMPE-1 Pancake - Crepe Machine2.Brush with softened shortening and sprinkle with salt and scallions. Roll into a long thin spiral and flatten it. Fold into square and flatten it again.  Heat oil and fry each piece until golden brown, flipping once. Add a small amount of oil in between pancakes if oil becomes depleted.
